So do these new digital releases preaty much put to rest the whole Star Wars saga is being remastered in 4K? I can understand the not releasing the original films, but the blu-ray transfers are not very good. Funny world where obscure 1980's slashers and Working Girl can get 4K remasters, but not Star Wars.

No,

They are just the first ever release on a digital non physical format.
They had masters ready for this with the blu releases.
This is not the last release of star wars on any format

I don't think anything here indicates that there's no hope for an UOT release.

In Disney's eyes, they paid BILLIONS of $$$ for George's universe.

It's lucasfilms, Kathleen Kennedy runs lucasfilm and she was hand picked by George. Opinions are like a-holes, everyone has one, this happens to be mine. No need to swear.

George more or less let go of star wars. I honestly don't think he really cares that much anymore. And the reason they never got released in the past was because he was in charge of all the decision making and didn't want to spend his own money on restoring them, but that's no longer his responsibility or concern since he stepped down. All that probably matters to him anymore is that his preferred versions (whatever those might be at the moment) are continuously made available.

This is the same Kennedy who let JJ throw out Georges treatments for episode 7 8 and 9 and rewrite whatever he wanted too. She doesn't hold that much to him.
