That would be great if they surprised every body with that, every member of the Star Wars staff including Lucas knows that the scene is crucial.

After I saw the trailers, I did a long research on google and I discovered that the pictures on the disc 7-8-9 are images of the Star Wars Visions book... See:

There's a 9 disc set that's all six movies and three bonus discs. Then there's a I-III set and a IV-VI set that don't have the extra discs.

Kind of. I mean, it isn't called that. If you're asking if its the biggest set on Blu-ray, than yes. The poll above is older than the Blu-ray announcement. "The Complete Saga" has everything they are putting on Blu-ray. The "ultimate" set implies something grander than anything that will ever come out in my opinion. There are no "unaltered" versions at all and there probably never will be.

Is there any chance of them including a demo for Kinect Star Wars seeing as they included an Xbox demo for Battlefront II with The DVD of Revenge of the Sith?

The Ultimate set doesn't exist, it was just an option in the poll as to what members would like if given the choice.

As it stands we have an original trilogy set, a prequel trilogy set and the complete saga set (which has three discs of special features). The trilogy sets don't have any special features discs.

That's the best they can come up with? I'm still gonna wait for this to come out and hear reviews about the over all quality of EVERYTHING before I get this. We all know this will NOT be the last time we see this on BR.

Probably not. The 360 does not read blu-ray discs.
