Off the top of my head:

Artoo hides behind an imaginery rock in ANH causes continuity errors.
Obi-Wan lets out a surround system destroying scream to frighten our neighbours and the Sandpeople in ANH.
Lukes lightsaber has been fixed in one Millennium Falcon training scene.
Wampa's arm fix now shows an error in the corner of the screen in TESB.
Jabba's palace now has a Rancor entrance i.e. a big fracking door has been CGI'd in place of the old one causes more continuity errors.
Wicket and two baby Ewok's blink.
Darth Vader now goes "No. Nnnnooo!!!" at the end of Jedi. Causing a billion fanboys to scream out in terror....

There have been other changes but thoses are ones I'm 100% about i.e. I read it on the internet somewhere.....

Not to reopen a can of worms, but how in the world does a bigger door to Jabba's palace create continuity errors?

You need to add

CGI yoda in Episode 1.
Ton of DNR added to Episode 1.
Padme's nipples have been digitally removed from AOTC (needs citation)

It's kind of funny actually cause that is the reason why people are boycotting this release- which is also funny cause it is still in the top ten on Amazon.com.

The door to Jabbas palace was meant to be huge in all shots. The left side of it just happens to be obstructed from view or not visible because of the camera angle. So, I don't think there's any continuity problem with this issue.

In the big scheme of things only a tiny number of people are boycotting this release. Wouldn't surprise me if this is the best selling blu-ray of all time.
