The Kill Bills are my favorite, with Pulp Fiction a close 2nd. Kill Bill has a lot going on - incredibly stylized action and filming, some great acting performances, and effectively a whole little world set up within the story with some very interesting morality questions. I revisit the Kill Bill films multiple times a year, and feel I catch something new each time.

Death Proof is certainly not up to the same quality standards as his best, but it was not a serious movie in the same way - it was a throwback to older, simpler movies designed around one concept. It was overly talky in parts, but I feel that it was that way purposefully to allow him to surprise the audience later on. We get so much talk about the inner-workings of the initial group of girls' social lives, only for them to be killed off in a minute-long scene. I know this will never be regarded as a classic of cinema, but I thought it was a lot of fun, and the car chase at the end is certainly high on the list of best chases ever.
