PS3 Audio Output?

I'm looking into getting a Blu-Ray player and am thinking about getting a PS3. I noticed there is a analog cable output, HDMI output, and toslink output.

Would I be able to use the HDMI to my tv, analog to have stereo sound to my speakers, and toslink to my headphones all work at the same time?

(I ask because I have my 360 connected like this: VGA to tv, toslink to headphones, and analog audio to stereo all work at the same time so that I can just turn off/on one audio source and use another with no hassle; or both)

The difference is that I game/movies through my headphones alone but use the stereo when there is company.


Another question. I was looking at the Blu-Ray Game Discs and noticed they all (most of them at least) say Dolby Digital on the back. Whats the best sound format available on the games?
