what should I set my PS3 audio setting on? I have it running to the TV via HDMI but I don't have a surround system. So which would sound better for what I have? I think there's an audio in and out option

Makes no odds. You will only get stereo

I would like to know as well. I have my 80gb connected to my 32" vizio with the hd component cables. I have a surround system which is a 200 watt RCA dvd player with component inputs on the back. Would I get the same graphics if I connected my PS3 to it.

32" lcd VIZIO 720p/1080i
80gb PS3/ Blu-ray player
3 PS3 games
4 Blu-ray discs / soon to own 10 more
250+DVDs most horror
