Hate to Necro this thread, but does anyone know the best blu-ray of the uncut uncensored French or European Cut? Any opinions? I assume the old american disc is the crappy theatrical US cut?

The German box set I have of Transporter 1-3 has the uncut first one, and the extended version of No. 2. Think it might be locked to region B if that's a problem.

The single releases of 1 & 2 from Germany are region free. Only the 3rd is region locked. This is according to dvdcompare.net

I have the French Blu-rays of the uncut Transporter 1 and 2 movies. Are the German ones better in picture and/or sound quality?

You can get the Japanese disc relatively cheap these days, I wouldn't touch the Euro discs.
