The most probable cause of your hiss is your receiver or some type of grounding problem in your system. For Blu-Ray playback the PS3 just unpacks the the zipped streams and sends the resulting LPCM on to the receiver which then does the D/A conversion. The PS3 doesn't create the sound. The receiver does.
