Because the first one is the only entry to have a 100% photochemical finish and I believe the movie was already remastered in 4K back in 2014 for the 10th anniversary theatrical re-release which happened to be the unrated cut. Since the 4K of the first used what was clearly an interpositive, it's possible that the OCN would be conformed to the theatrical cut and the interpositive they used was conformed to the unrated cut.

The unrated cuts for the sequels were 100% finished for home video and would have to be rebuilt from scratch if Lionsgate wanted to include them, unlike the theatrical cuts which would have conformed film elements.
