Well first of all, you have it set to Bitstream which the PS3 cannot do. You need to set it to Linear PCM, and I recommend setting it to auto. Selecting all the options won't do any good as your reciever may not be able to handle them all. Looking at the manual, the only digital input option is a Coaxial Digital Cable, since the PS3 only has optical digital for audio ouput on the back, that is the reason you aren't hearing any sound. I know you probably spent a little bit for you system, but the only other way to get surround sound from your PS3 may be to get a new reciever with an optical input.
