My PS3 is hooked up to my HDTV via an HDMI cable. I don't have any kind of reciever or speakers. Just one HDMI cable, that's it. Am I hearing lossless audio?

no you are hearing 2 channel pcm

PCM is technically 'lossless' audio since no data is discarded during compression, etc. That said you're only hearing a lossless 2-channel version of the audio, not the lossless 5.1/7.1 that you should be hearing.
