I get what you're saying, but in another way her caution not to display emotion is in part based on how The Hound has taught her to act. By stealing his money and leaving, you could see it as her display to him of showing what she's learnt from him, whereas killing him would have been a weakness that he wouldn't have respected (even though he begged for her to do it). She didn't need to cross him off her list because, after all they'd been through, he wasn't on it anymore. That's how I felt about it, anyway.
