It seems weird, but you will hear a great difference. It's also a hard thing for me to describe. The sound seems more realistic, like those explosions are really happening almost. One thing I notice is that the sides/rears are more powerful-sounding, and there is a greater sense that each speaker seems to have it's own unique soundtrack. Sure, some films (dialogue-heavy) still play mostly upfront, but action scenes and soundtracks kick arse!

Your two extra side speakers for 7.1 should be like your others.

Yes and yes.

If you decide to add the extra two speakers for 7.1, placement can be tricky...I got end-tables for each side of the couch and put them there. If you do this, remember that for your 5.1 movies (i.e., almost all of them) the rear two channels will now be the rear-sides, the two speakers in back will be silent - see images in link below:
