There is no real reason to touch the current HD 5.1 as it is the untouched 5.1 first available on the THX Laserdisc and later the DVDs which presumably is from the beefed up 70mm release and sounds better than all previous releases I've compared it to. This also goes for 2 and 3 as well. It's one of the few times an audio track on a major studio release is presented in lossless quality without it being messed around with or somehow being deficient to earlier incarnations.
There are many ac3 Laserdiscs that sound better than later editions due to the lack of compression and remixing applied but when I compared all the various Die Hards the DTS-HDMA audio clearly trounced the older ones on all counts.

The only edition I haven't owned is the DTS Laserdisc because those things are massively expensive and rare. That said the three I do own sound slightly better than the lossless Blu-ray equivalents so there is that to mull over...

I'm fine with the original audio mix. Not every movie is meant to have an immersive audio mix.

I hope that if and when they remaster Die Hard 2, the regular Blu-ray version gets an upgrade and doesn't have that orange tint throughout the whole movie. The only reason to keep around the DVD is because it doesn't have any orange saturating the picture, and, if you have the SE versions, bonus features.

It would also be nice to have the extra power shutdown scenes that were in the DVD release in the new version as well.

This one screamed for Atmos and actually had an Atmos mix made with a partnership between Fox and Dolby.

I'd certainly like a slipcover. Fox's slipcovers for The Shape of Water and Three Billboards really nice. Though most of my other Fox releases don't have slipcovers.

If it doesn't come with a slipcover then, like others have said, I have little reason not to wait for it to be $10-15 during or around Black Friday.

The sound is pretty edgy.
Which is a big deal in a movie with a LOT of breaking glass.

Yes and no. If they are going to sell these UHD's for $35 a pop, they better give me more than just improved PQ. Not everyone double dips just because of a bump in PQ quality, which at times is just minimal. Adding an immersive mix is giving the client incentive to buy.
