Default White or Grey Projector Screen?

I currently have a 106" Grey .08 Gain Elite Screens projector screen. I have been reading articles about different types of screens and when to use them. It seems the census is that you should use a Grey screen when you have a low contrast projector (under 2000:1 contrast) my current projector is 10000:1 contrast.

What I want is the brightest colors that pop off the screen. Should I change to a 106" white 1.1 gain? Will I notice a difference in the colors? Any help is appreciated. Here is my setup.

Room is 16X18
I have total control of ambient light. I can make the room completely black
Dark wall where screen is and a black ceiling.
Epson 720p Projector with 10000:1 contrast
Seating is about 12' from the screen.
