They only built the left side of the set, Vader was looking out the right side so they flopped the footage. It's the only time in the trilogy you see the uniforms on the wrong side, so they finally fixed that.

Why didn't they fix those flipped shots of Boba (in JEDI) too?

There's also the flipped scene in The Phantom Menace of Obi-Wan outside the Queens starship before he meets Anakin. Lucas and ILM forgot to flip it during editing.

Actually, it's not a flipped shot. You can tell because of Ewan McGregor's mole. Apparently, the makeup artist accidentally put the hair braid behind the wrong ear.
