Normally I agree with you OVN, but this time you're incorrect. Your ideal scenario about him being tried is not possible with somebody as powerful as him, who didn't have anybody in the known galaxy capable of keeping him held captive. For all we know, he was fully capable (if not more so since he had so much time to train between RotS and RotJ) of slaughtering Jedi as he was in Revenge of the Sith.

The Sith that are that powerful really cannot be kept alive. Ask Mace Windu; he'll tell you all about it.

There wasn't a stand-in, there was a proper AC-TOR cast in the role who voiced Dex and acted across from Ewan. His performance gave the animators lots of ideas for the character like Dex's awkward walk, the way he heaves himself onto the seat etc.
