Think about it this way. CDs are lossless audio since they are not lossily compressed. But they are only 16-bit 44.1kHz audio and not bit-to-bit from the master tapes, which can be 20/24-bit at 96kHz.

In the earlier BD releases, MPCM was used to deliver lossless audio but at reduced resolution (16-bit 48kHz) but now with Dolby TrueHD and DTS HDMA, master-tape resolution is becoming the norm. Not to say that all of the lossless audio you'll be seeing would be 20/24-bit either since some 80s/90s movies were mixed at CD resolution.

All receivers must have DACs because it converts digital audio signal to analog audio signal. Analog signal is what's needed to drive your speakers.
RAW Digital Bitstream->Decoder-> Digital audio signal->DACs->Analog audio signal->Speaker

That is why I said the PS3 has stereo DACs because using the AV Multiout, you only get stereo analog audio. Using optical out, the audio signal stays in digital form (including the DD/DTS bitstream). Using HDMI, the MPCM audio also stays in the digital realm.

Makes the PS3 cheaper to produce. Quality DACs aren't cheap. And it doesn't matter much since most people would opt for optical and HDMI to get them multichannel out.
