Do you keep doubles of movies (i.e. Blu-rays and DVD editions)?

Yes I too still have the original 20th Anniversary DVD set of all 4 films (I assume this is the one you mean). This was actually my very first DVD purchase back in the year 2000, but I also bought the Quadrilogy set when this came out a few years later. And of course, I also have the blu-ray versions too.....you can probably tell I love the Alien films.

Other than that, I generally keep the DVD's if they offer something different to the blu-rays, as others have already mentioned - alternate cuts, extra material, etc.
