These are handled by different studios. The Terminator is put out by MGM (via Fox) and Terminator 2 is from Lionsgate.

Personally, I'm waiting for the Special Edition version of T2. Like other Cameron films, the compromise for Hollwood execs version is a pale comparison to the Director's Cut.

T2, Aliens, and The Abyss are all films that only fully make sense with the Director's Cut.
