The PS3 will bitstream out everything but Dolby TrueHD and DTS-HD over the HDMI. Buying a receiver with TrueHD and DTS-HD processing will not net you anything with the PS3 as the source. Most people I've met or read with a receiver capable HDMI audio input select PCM out on the PS3 which configures internal digital audio processing and outputs only PCM to the receiver.

If you have a good enough HDMI receiver, you should bitstream out the audio on all tracks, except the TrueHD (which the PS3 has to be set to LPCM to hear the correct track). A good quality receiver will place a better soundfield on the tracks. Plus, when dealing with DTS-ES, the PS3 will not decode that 6th channel, only 5. You do lose something in some tracks when you let the PS3 do the decoding. The receiver has more dedicated circuitry to decode and spread out the audio properly than the PS3.
