From your list I chose The Twilight Zone. However, you do realize that The Simpsons, since it is still in production, is up to something like season 20, right? It would be incredibly expensive to buy all those seasons at once. (I'm guessing it would be somewhere between $300 and $400.)

Voted for Seinfeld since I like that series. I have heard that Seinfeld was recorded on film rather than video, if this is the case, blu-ray mastering could be beneficial.
