The Hong Kong Blu-ray release of John Woo's Red Cliff (Chi bi) got exemplary marks in the A/V department from Dr. Atanasov, so that seems well worth checking out.

Exiled and Cinderella Man are probably my favorites (picture and film-wise). Ronin is an incredible movie but the transfer is not the greatest.

In general, I've got no complaints about non-US releases that I've watched. CHILDREN OF MEN and THE SEVENTH SEAL have great Picture quality. I also have to mention BLEAK HOUSE, it's only 1080 i, but looks great.

Predator 2 looks great (especially since the DVD was pure crap)
The Island is very Nice (no HD audio though)
Sin City is Fantastic
From Dusk Till Dawn is pretty damn good considering the source
Until Death is very slick too
Tomb Raider 2: Cradle of Life has great PQ but only a 1.5 mbps DTS track
Air Force One is in Top tier IMO and an AMAZING PCM track
Flash Point has Awesome PQ and very solid AQ
Hostage is very nice in both PQ and AQ, nothing to orgasm about but still nice
Bone Collector is another very nice one.

I thought I read that has some problem with watermarking.
