The 2011 and the 2015 Editions can fit onto one Disk, assuming anything is different!

I have a hunch that the 2015 editions if such versions actually exist will probably be existing versions of the movies.

Also I can't see the rest of 3D conversions being included.

How far did the 3D conversions get?

I know that TPM has been done and released but did any of the other movies get completed?

It would be awesome if Disney asked the fans for what they would like to see in such a box set if one to ever be made.

That way everyone would be happy.

Then again there will be always someone complaining for the sake of complaining.

Episodes 2, 3 and 4 are all done. 4 and 5 were being worked on at the time of "Cancellation"

StarWars.com has revealed that Star Wars: Episode III Revenge of the Sith will make its 3D debut during the Star Wars in Anaheim, California later this year. Revenge of the Sith, originally released in 2005, was the installment that brought the Star Wars saga full circle. The site says that Lucasfilm carefully converted the film so fans will be able to relive the movie's epic moments in 3D glory while retaining "the look of the original movie."

And there's more good news: the Star Wars Celebration, which runs April 16-19, will show the Phantom Menace in 3D and debut Star Wars Rebels: Season 2's first episode, while Attack of the Clones will also premiere in 3D. Originally, Star Wars: Episode I, II, and III were all supposed to get the 3D treatment earlier, but only the Phantom Menace was re-released. Now, catch all three in 3D before Episode VII hits theaters December 18, 2015.

Your list is about as definitive as it gets.

Disney could sneak in The Holiday Special as an Easter Egg as well purely for the s**ts and giggles.

Why Sneak it at all?
There are Two Disks of Unique Special Features for Each Movie in my breakdown.
It could go with any of the Original Trilogy.
A New Hope as it came out after it.
Empire as it came out before it and has Boba in it.
Jedi as it has Boba in it.

And they can port over ALL existing Legacy Bonus Features and still have room left over on those Bonus Disks!

And then there'd be the PQ and AQ, bitrate, color timing, which encoder they used, and the package and disc art.

Yes, Empire definitely looks the best of the originals and I find the color timing the least offensive especially skintones (which just take on weird looks at times with A New Hope and Jedi).
