I can help with the DVD/BDP question. I'm not familiar with wireless headphones.

Cable box: HDMI from box to TV for video & audio
DVD Player: Component video to AVR / Coax audio to sound bar
BDP: HDMI to sound bar for video & audio
TV: HDMI out from sound bar to the TV

Simply use the input select button on the theater system or the remote to select the audiuo jack being used for the DVD player or the Blu-ray player.

Your current wiring, using HDMI from the BDP to the TV for video, will also work. You can use optical instead of coax for audio from the DVD player.
