Selecting PCM will decode the TrueHD with the PS3's internal decoder and sent it through as PCM. You only want to set it as bitstream if your receiver has TrueHD decoding.

I did find that the only way I was able to hear my DD audio track was setting it to "bitstream". PCM only read as Pro Logic thru my Lexicon. You need it set to bitstream when using the optical cable to receive the DD track otherwise all I got was standard Pro Logic thru the optical cable.
