I remember there being a favorite subway grinder thread that sparked some food discussion. I've also seen Wicky and Penton supplying each other with recommendations on where to eat in Philly and LA. To top things off, I saw Ratatouille on Blu-ray somewhat recently. It all got me thinking: anyone here got recipes of their own? Share them!
My dinner for example, was an old family favorite: roast chicken, mom and dad's way. In this case it's split breast. First cover it in flour, all the while put a shallow pool of oil into the pan. I use a blend of olive oil and butter.* Put the meat in, set heat to medium. Sear both (or should I say 'all') sides for several minutes each, turning them over frequently, including turning thicker pieces on their sides. When they've been sufficiently darkened, turn off the burner and transfer them to a foil-lined metal pan. The pan should be atleast 2 inches deep. Put the pan into the oven at 350 and let it bake for 48 minutes. Test with a fork: clear liquid means done, pink liquid or tough chicken means it needs more time, but be careful not let it get burned. Remove and serve.** Notes: * This step is where you can customize it. There's many great seasoning combinations that go with chicken; I use a blend that's mostly paprika, with hints of a few others. You can also try different oils. I put my seasoning on while it's in the pan; some of it inevitably falls into the oil and mixes with it; and that actually helps integrate it with meat. **Goes well with your fav. dipping sauce too. I make a spicey chicken soup where people BEG me for the recipe. But, it is my closely guarded secret.
I make a linguini and clamsauce with scallops that is to die for. Not to mention a no-bake chocolate and almond-cream pie which is requested as my item to bring whenever I am invited to dinner. However, want to know the secret to a great tasting home made tomato sauce? Mrs. Dash Italian seasoning. Plus I add a teaspoon of sugar, or more, per can of fresh tomatoes used. Breaks down the acids and sweetens the sauce. Tastes a bit like that Raw-goo crap you buy in the store, only less sweet and better for you. Last edited by tron3; 04-09-2008 at 03:26 PM. |

I enjoy cooking Chinese food, some stir fry, bought this great Zojirushi rice cooker recently, if you ever want perfect rice this is the brand to get.
I also cook up Indian food regularly. I love Lebanese food, trying to teach myself how to make spinach pies and baked Kibbe. |

Zojirushi---is that the one with the funny little elephant? I'm in the market. Our new gas range runs a bit too hot on the stovetop to make rice, even with a heat diffuser...
Had some friends over for a birthday celebration this weekend, made a minted lemon beef salad. Can't wait till the kids are big enough to train as my kitchen serfs. |

Yeah Joe, thats the one. Musashi, this is the cooker I bought, one of their less expensive models but its great.

What am I eating?
Easy answer. What ever doesn't eat me first. Am I a cook? Harder to say. I can cook, and will cook. I don't really have much of a type of food I like to cook though. I like making Spaghetti and Meatballs. I change the sauce alot from its orignal bottled form. For example, I'll add Garlic, Ground Red Pepper, Basil, Black Pepper, etc. I like my food spice. Too bad I can't cook Tex-Mex/Mexican. Haven't tried. Maybe during the summer I'll experiment while I have my break. I also like to cook sweets because I have random urges for brownies, cake, or cookies. The only thing I've made that is from "scrach" is a kind of 'Triple Chocolate Chip and Walnut Cookies'. Tastes amazing. Anyone besides me get the "Cuisine at Home" Magazine? It had two amazing chicken recipes in it. A Pecan Chicken, and a Parmasean Chicken. Probably best recipies ever. |

The wife got me a subscription a while back, recently re-upped. It's pretty good. I like the fact that it consists entirely of recipes and articles, that it's not 72% advertisements. Last recipe of theirs I fixed came not from a regular issue but a special soups collection that arrived a while ago---a cream of tomato soup made by oven-roasting fresh tomatoes. It does wonders for those out-of-season supermarket maters, adding dimension and sweetness. (I'm glad the roadside produce stands around here are starting to open back up: love me some truly vine-ripe tomato sandwiches.)

As for stuff that I actually cook, I make awesome rosemary roasted potatoes, creamy orzo (this recipe is by Giada DeLaurentis on food.com), cakes, tomato basil mozzerella panini, and the BEST guacamole ever, just to name a few. Lately I've been craving chilequiles. I should hit the market tomorrow. |

Anyways; I'm more of a breakfast "cook". I make some great scrambled eggs. 6 eggs 4 slices of white american cheese a bit less than a handfull of the "mexican" cheese 2 tbsp of 1% milk a dash of oregano a dash of "Mrs. Dash" BBQ chicken seasoning. Also you could turn it into an omlette using half of everything there and adding some chicken. ![]() |
